  1. 1

    Prepare the Ingredients

Prick potatoes with a fork all over. Place on a microwave-safe plate.

Working in batches if necessary, microwave until fork-tender, 5-7 minutes.

Carefully remove from microwave. Rest until cool enough to handle, 3-5 minutes.

Once cool enough to handle, cut potatoes into 1"-thick slices. You should have 3-4 slices per potato.

    While potatoes microwave, stem thyme.

  2. 2

    Sear the Potatoes

Season potatoes all over with 1/4 tsp. salt and 1/4 tsp. pepper.

Place a large non-stick pan over medium-high heat and add 1 Tbsp. olive oil. Let oil heat, 2 minutes.

After 2 minutes, working in batches if necessary, add potatoes to hot pan in an even layer. Cook undisturbed until browned, 2-3 minutes per side.

  3. 3

    Add Sauce and Finish Dish

Add onion jam, butter, demi-glace, and thyme to hot pan. Flip potatoes often until butter is melted and potatoes are evenly coated, 2-3 minutes.

    Remove from burner.

Plate dish as pictured on front of card, garnishing potatoes with cheese. Bon appétit!
