- 2 tsp. Chimichurri Seasoning

If using antibiotic free chicken, pat dry. Cook in a medium non-stick pan with 2 tsp. olive oil over medium heat until chicken reaches minimum internal temperature, 5-7 minutes per side.

1 Bake the Couscous
In one provided tray, combine couscous, 2 cups water, mirepoix base, garlic salt, garlic and parsley seasoning, and 1/4 tsp. pepper. Kids want to help? With supervision, have them help prepare the couscous.
Bake uncovered in hot oven until tender, 25-30 minutes.Carefully remove from oven. Stir in softened roasted garlic and herb butter until combined. Tray will be hot! Use a utensil.While couscous bakes, continue recipe. -
2 Start the Shrimp
Pat shrimp dry.
In second provided tray, combine shrimp, mixed peppers, and 2 tsp. olive oil. Spread into a single layer.Bake shrimp uncovered in hot oven, 15 minutes.After 15 minutes, carefully remove shrimp tray from oven and drain any excess liquid. Stir in crushed tomatoes, chimichurri seasoning, and 1/4 tsp. salt until combined.Evenly top with Tuscan herb butter (use less if spice-averse)Kids not a fan of extra heat? Feel free to skip/reduce the Tuscan herb butter. Butter will melt as shrimp bakes. -
3 Finish Shrimp and Finish Meal
Bake again uncovered in hot oven until shrimp reach a minimum internal temperature of 145 degrees, 8-10 minutes.
Carefully remove from oven and stir to combine. Tray will be hot! Use a utensil.While shrimp mixture bakes, stem and tear dill. Kids want to help? With supervision, have them help prepare the dill.To serve, top couscous with shrimp mixture. Garnish with feta and dill. Bon appétit!
