Before You Cook

Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

Customize It Instructions

  • Meatlovers! If using protein, cook in a medium non-stick pan over medium heat with 1 tsp. olive oil.

  • If using antibiotic free chicken, pat dry. Cook until chicken reaches minimum internal temperature, 5-7 minutes per side.

  • If using sirloin steaks, pat dry. Cook until steak reaches desired doneness, or 4-6 minutes per side for medium/medium-well. Rest, 3 minutes. Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.

  • Add protein to meal as desired.

    Start the Vegetables

    Place a large non-stick pan over medium heat and add 2 tsp. olive oil.

    Add diced peppers to hot pan. Stir occasionally until slightly tender, 5-7 minutes.

    Add minced garlic and parsley (reserve 1/2 tsp. for crema) and stir occasionally until slightly browned, 30-60 seconds.

    Finish the Vegetables

    Drain and rinse chickpeas in a colander/strainer.

    Add chickpeas, tomatoes, harissa (to taste), and 1/4 tsp. salt to hot pan. Kids not a fan of extra heat? Feel free to skip/reduce the harissa.

    Stir occasionally until combined and chickpeas are heated through, 2-3 minutes.

    Remove from burner.

    While vegetables cook, continue recipe.

    Heat the Rice

    Carefully massage rice in bag to break up any clumps and remove from packaging.

    In a microwave-safe bowl, combine rice, mirepoix base, adobo seasoning, and a pinch of salt. Microwave uncovered until heated through, 2-3 minutes.

    Carefully remove from microwave. Rest, 2 minutes.

    Fluff rice with a fork.

    While rice heats, continue recipe.

    Make Crema and Finish Dish

    In a mixing bowl, combine creme fraiche, a pinch of salt, 1 tsp. olive oil, remaining minced garlic and parsley, and 1 Tbsp. water. Kids want to help? With supervision, have them help make the crema.

    If too thick, add additional water, 1 tsp. at a time, until desired consistency is reached.

    Plate dish as pictured on front of card, topping rice with vegetable-chickpea mixture. Garnish with crema. Bon appétit!
