If using antibiotic free chicken breasts, follow same instructions.

1 Prepare the Potatoes
Prick potatoes all over with a fork.
Place potatoes and 1 Tbsp. water in a microwave-safe bowl. Cover with a damp paper towel.Microwave covered until slightly tender, 5-7 minutes.Carefully remove from microwave. Transfer potatoes to one provided tray and toss with 2 tsp. olive oil, garlic salt, and a pinch of pepper. Wipe bowl clean and reserve. Potatoes and bowl will be hot! Use caution. -
2 Start the Chicken and Potatoes
Pat chicken dry. Season both sides with 1/4 tsp. salt and Italian seasoning.
Place chicken in second provided tray.Bake both trays uncovered in hot oven until potatoes are tender and chicken reaches a minimum internal temperature of 165 degrees, 20-25 minutes.Carefully remove both trays from oven and drain any excess liquid. Trays will be hot! Use caution. -
3 Finish Chicken and Potatoes, Heat Peas, and Finish Meal
Evenly top chicken with marinara, pepperoni, then cheese. Bake again uncovered in hot oven until cheese is melted, 3-5 minutes.
While chicken bakes, in reserved microwave-safe bowl, combine peas, half the softened butter (reserve remaining for potatoes), 1/4 tsp. salt, and a pinch of pepper. Microwave uncovered until heated through, 3-5 minutes.Carefully remove from microwave and stir to combine. Set aside.While peas microwave, stir remaining softened butter into potatoes until combined. Transfer potatoes to a clean, flat work surface. Using the flat side of an object, press down gently to smash each potato until 1/2" thick.Carefully remove chicken tray from oven. To serve, top potatoes with sour cream. Bon appétit!
