Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

1 Make Meatballs
Mix ground turkey, panko, fiesta seasoning, and 1/2 the nacho cheese in a mixing bowl until completely combined. Form into 16 equally-sized meatballs.

2 Cook Meatballs
Place a large non-stick pan over medium heat and add 2 tsp. olive oil. Add meatballs to hot pan. Cover, and roll occasionally until browned all over and turkey reaches a minimum internal temperature of 165 degrees, 11-13 minutes.
While meatballs cook, continue recipe -
3 Make Sauce
Place a small pot over medium heat. Add chicken broth, 1/4 cup water, and cream cheese to pot. Bring to a simmer, stirring occasionally, and simmer until cream cheese is fully melted - 2-3 minutes.
Remove from heat and add remaining nacho cheese to pot. Stir vigorously until cheese is fully melted and combined. Keep warm. -
4 Cook Rice and Finish Dish
Place rice and 1/2 tsp salt in a microwave-safe bowl. Microwave uncovered until heated through, 2-3 minutes. Carefully remove from microwave. Rest, 2 minutes. Fluff rice with a fork.
Serve meatballs over rice.Drizzle meatballs with cheese sauce.Top bowls with sour cream, salsa, and tortilla strips as pictured.
