  1. 1

    Bake the Butternut Squash

Place butternut squash in provided tray. Toss with 1 tsp. olive oil, half the ancho cinnamon rub (to taste; reserve remaining for sauce), and 1/4 tsp. salt. Spread into an even layer.

Bake uncovered in hot oven until tender, 20-25 minutes.

While butternut squash bakes, continue recipe.

  2. 2

    Assemble the Enchiladas

Wrap tortillas in a damp paper towel. If tortillas come folded, keep folded. Microwave until heated through, 30-60 seconds.

Carefully remove from microwave and transfer to a clean, flat work surface.

While tortillas microwave, in a mixing bowl, combine enchilada sauce (to taste), remaining ancho cinnamon rub (to taste), pesto (to taste), and 2 Tbsp. water. Set aside.

Drain pulled pork and separate pieces.

After 20-25 minutes, carefully remove tray from oven. Evenly divide pork, butternut squash, and quesadilla cheese between tortillas, placing in center. Wipe tray clean, spray with cooking spray, and reserve.

Tuck one tortilla end under filling and roll tightly. Place seam-side down in reserved tray and evenly top with sauce (to taste).

  3. 3

    Bake Enchiladas and Finish Meal

Bake uncovered in hot oven until tortillas are browned and pork is heated through, 20-25 minutes.

    While meal bakes, halve lime.

    Carefully remove tray from oven.

To serve, top enchiladas with cheddar cheese and sour cream. Squeeze lime halves over to taste. Bon appétit!
