If using top round steak, pat dry. Cook until steak reaches desired doneness, or 3-5 minutes per side for medium/medium-well. Rest, 3 minutes. Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.

If using chicken cutlets, pat dry. Cook until chicken reaches minimum internal temperature, 3-5 minutes per side. Cutlet thickness can vary; if you receive a thinner cutlet, we recommend checking for doneness sooner.

1 Prepare the Ingredients
Trim and thinly slice green onions, keeping white and green portions separate.
Place a large non-stick pan over medium heat and add 1 tsp. olive oil.Add white portions of green onions to hot pan and stir occasionally until beginning to soften, 1-3 minutes.While green onions cook, pat salmon dry and season flesh side with blackening seasoning and potato spice seasoning.Remove from burner. Transfer white portions of green onions to a mixing bowl and set aside.Wipe pan clean and reserve. -
2 Cook the Salmon
Return pan used to cook white portions of green onions to medium heat. Add 2 tsp. olive oil and salmon, skin-side up, to hot pan and sear until golden-brown and salmon reaches a minimum internal temperature of 145 degrees, 3-4 minutes per side.
While salmon cooks, continue recipe. -
3 Heat the Mashed Potatoes
Add mashed potatoes, cream cheese, shredded cheese, and 1/4 tsp. salt to a microwave-safe bowl. Vigorously stir to combine.
Microwave uncovered until heated through, 2-3 minutes.Carefully remove from microwave and vigorously stir to combine.While mashed potatoes microwave, continue recipe. -
4 Make Butter Topping and Finish Dish
Once cool enough to handle, add softened butter and mustard (to taste) to bowl with cooked white portions of green onions. Stir until thoroughly combined. Set aside.
Plate dish as pictured on front of card, topping salmon with butter topping and garnishing mashed potatoes with green portions of green onions. Bon appétit!
