Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

- Ground Turkey 165° F |

1 Prepare the Ingredients
Drain and rinse beans in a colander/strainer.
Stem and coarsely chop cilantroZest and halve lime. Juice both halves. -
2 Prepare the Meatballs
In a mixing bowl, combine panko and 1/3 cup water. Let sit, 1 minute.
After 1 minute, add ground pork, adobo seasoning, and 2/3 the garlic salt (reserve remaining for rice). Form meat mixture into 16 evenly-sized meatballs. -
3 Cook the Meatballs
Place a large non-stick pan over medium-high heat and add 2 tsp. olive oil. Add meatballs to hot pan. Cover and stir occasionally until meatballs are browned and reach a minimum internal temperature of 160 degrees, 10-15 minutes.
Remove from burner. Transfer meatballs to a plate. Reserve pan; no need to wipe clean. -
4 Make the Sauce
In a microwave-safe bowl, combine brown sugar, 1 Tbsp. lime juice, cornstarch, sofrito sauce, and 3 Tbsp. water.
Return pan used to cook meatballs to low heat.Add sauce mixture to hot pan and stir constantly until slightly thickened, 1-2 minutes.If too thick, add additional water, 1 tsp. at a time, until desired consistency is reached.Wipe bowl clean and reserve.Add meatballs and stir occasionally until coated, 1-2 minutes.Remove from burner.While sauce cooks, continue recipe. -
5 Heat Rice and Finish Dish
Carefully massage rice in bag to break up any clumps. Remove rice from packaging.
In reserved microwave-safe bowl, combine rice, black beans, and remaining garlic salt.Microwave uncovered until heated through, 3-4 minutes.Carefully remove from microwave. Rest, 2 minutes.Stir in softened butter and 1/2 tsp. lime zest (to taste) until combined. Fluff rice with a fork.Plate dish as pictured on front of card, topping rice with meatballs and sauce from pan. Garnish with cilantro. Bon appétit!
