If using mahi-mahi, pat dry. Halve any larger pieces to match smaller pieces. Cook until mahi-mahi reaches minimum internal temperature, 3-4 minutes per side. Fish thickness can vary; if you receive a thinner fillet, we recommend checking for doneness sooner.

If using sirloin steaks, pat dry. Cook until steak reaches desired doneness, or 4-6 minutes per side for medium/medium-well. Rest, 3 minutes. Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.

1 Prepare the Ingredients
Halve avocado and remove pit by carefully tapping pit with the blade of your knife so it sticks. Gently twist knife to release pit. Scoop out the flesh with a spoon. Cut into 1/4" dice.
Trim and thinly slice green onions.Kids not a fan of extra heat? Feel free to skip/reduce the piri piri seasoning. Pat salmon dry. Season flesh side with piri piri seasoning (use less if spice-averse). -
2 Cook the Edamame
Place a large non-stick pan over medium heat and add 2 tsp. olive oil.
Add edamame to hot pan. Stir often until heated through, 1-2 minutes.Stir in sweet chili sauce and soy sauce until combined, 20-30 seconds.Transfer edamame to a plate. Wipe pan clean and keep over medium heat. Pan will be hot! Use caution. -
3 Cook the Salmon
Add 2 tsp. olive oil and salmon, skin-side up, to hot pan. Sear until golden-brown and salmon reaches a minimum internal temperature of 145 degrees, 3-4 minutes per side.
Remove from burner.While salmon cooks, continue recipe. -
4 Heat the Rice
Carefully massage rice in bag to break up any clumps and remove from packaging. Place rice in a microwave-safe bowl.
Microwave uncovered until heated through, 3-4 minutes.Carefully remove from microwave. Stir in 1/4 tsp. salt until combined. Rest, 2 minutes. Fluff rice with a fork.While rice microwaves, continue recipe. -
5 Make Sauce and Finish Dish
Kids not a fan of extra heat? Feel free to skip/reduce the Sriracha.
In a mixing bowl, combine dressing, mayonnaise, Sriracha (to taste), and a pinch of salt.Plate dish as pictured on front of card, topping rice with salmon, avocado, and edamame. Garnish salmon with sauce and top dish with green onions. Bon appétit!
