Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

Customize It Instructions

  • If using diced chicken breasts, pat dry. Stir occasionally until chicken reaches minimum internal temperature, 5-7 minutes.

  • If using ground beef, break up until beef reaches minimum internal temperature, 4-6 minutes. 

  • If using shrimp, pat dry. Cook until pink and shrimp reach minimum internal temperature, 2-3 minutes per side.

    Prepare the Ingredients

    Remove stem, seeds, and ribs, and cut bell pepper into 1/2" dice.

    Trim and thinly slice green onions, keeping white and green portions separate.

    Mince garlic.

    Halve poblano pepper lengthwise, seed, and cut into 1/2” dice. Poblano peppers can vary in spice level; most are mild, but a few can be quite hot. Wash hands and cutting board after prepping.

    Cook the Sausage

    Remove Italian sausage from casing, if necessary.

    Place a large non-stick pan over medium-high heat and add 1 tsp. olive oil. Add sausage to hot pan. Break into smaller pieces until no pink remains and sausage reaches a minimum internal temperature of 160 degrees, 4-6 minutes.

    Transfer sausage to a plate. Keep pan over medium-high heat.

    Cook the Vegetables

    Add 1 tsp. olive oil, bell peppers, and poblanos (to taste) to hot pan. Stir occasionally until tender, 5-7 minutes.

    If pan becomes dry, add water, 1 Tbsp. at a time, as needed.

    Add garlic and white portions of green onions and stir often until fragrant, 1-2 minutes.

    Add the Rice and Sausage

    Add 1/2 cup water, tomato sauce, chicken base, a pinch of salt, and Cajun seasoning (to taste) to hot pan. Bring to a simmer.

    Carefully massage rice in bag to break up any clumps. Remove rice from packaging.

    Once simmering, add rice and sausage. Stir occasionally until rice is heated through, 1-2 minutes.

    Remove from burner.

    Finish the Dish

    Plate dish as pictured on front of card, topping with green portions of green onions and sour cream. Bon appétit!
