Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

Customize It Instructions

  • If using diced chicken breasts, pat dry. Stir occasionally until chicken reaches minimum internal temperature, 5-7 minutes.

  • If using diced chicken thighs, pat dry. Stir occasionally until chicken reaches minimum internal temperature, 5-7 minutes. Don't worry about trimming. Excess fat will render while cooking and add flavor.

    Prepare Ingredients and Make Sauce

    Remove stem, seeds, and ribs, and cut bell pepper into 1/4" dice. Alternatively, reserve half the raw bell peppers for snacking/serving on the side.

    Coarsely chop mangoes. If mangoes are frozen, rinse under cold water until thawed.

    Halve plantains.

    Trim and thinly slice green onions on an angle, keeping white and green portions separate.

    In a mixing bowl, combine ketchup, brown sugar, half the jerk seasoning (to taste; reserve remaining for shrimp), soy sauce, and 1/4 cup water. Set aside.

    Pat shrimp dry and season all over with remaining jerk seasoning (use less if spice-averse). Kids not a fan of extra heat? Feel free to skip/reduce the jerk seasoning.

    Cook the Plantains

    Line a plate with a paper towel.

    Place a large non-stick pan over medium heat and add 1 Tbsp. olive oil.

    Add plantains to hot pan. Cook until golden-brown, 2-3 minutes per side.

    Transfer plantains to towel-lined plate and season with a pinch of salt. Keep pan over medium heat; no need to wipe clean.

    Cook the Shrimp Mixture

    Add bell peppers to hot pan. Stir occasionally until slightly tender, 3-5 minutes.

    Add shrimp. Cook until pink and shrimp reach a minimum internal temperature of 145 degrees, 2-3 minutes per side.

    Add mangoes and white portions of green onions. Stir occasionally until mangoes are slightly softened and green onions are fragrant, 2-3 minutes.

    Add the Sauce

    Add sauce (to taste) to hot pan. Stir to combine and bring to a simmer.

    Once simmering, stir occasionally until sauce is slightly thickened, 2-3 minutes.

    Remove from burner.

    While shrimp mixture cooks, continue recipe.

    Heat Rice and Finish Dish

    Carefully massage rice in bag to break up any clumps and remove from packaging.

    Place rice in a microwave-safe bowl.

    Microwave uncovered until heated through, 3-4 minutes.

    Carefully remove from microwave. Rest, 2 minutes.

    Fluff rice with a fork.

    Plate dish as pictured on front of card, topping rice with shrimp mixture. Garnish with green portions of green onions. Bon appétit!
