Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

- Ground Turkey 165° F |

If using antibiotic free chicken, pat dry. Cook until chicken reaches minimum internal temperature, 5-7 minutes per side.

If using top round steak, pat dry. Cook until steak reaches desired doneness, or 3-5 minutes per side for medium/medium-well. Rest, 3 minutes. Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.

1 Cook the Pasta
Once water is boiling, add pasta (break in half if needed to fit in your pan) and cook until al dente, 11-12 minutes.
Remove from burner. Reserve 3/4 cup pasta cooking water. Drain pasta in a colander/strainer and set aside. Reserve pan; no need to wipe clean.While pasta cooks, continue recipe. -
2 Prepare the Ingredients
Zest, halve, and juice lemon.
Coarsely chop capers.Trim and thinly slice green onions, keeping white and green portions separate.Mince garlic.Pat salmon dry. Season flesh side with 1/4 tsp. salt and 1/4 tsp. pepper. -
3 Cook the Salmon
Return pan used to cook pasta to medium heat and add 2 tsp. olive oil.
Working in batches if necessary, add salmon, skin-side up, to hot pan. Sear until golden-brown and salmon reaches a minimum internal temperature of 145 degrees, 3-4 minutes per side.Transfer salmon to a plate and cover with foil. Wipe pan clean and keep over medium heat. -
4 Make the Sauce
Add plain butter, garlic, capers, and white portions of green onions to hot pan. Stir occasionally until slightly browned and fragrant, 30-60 seconds.
Add 2 Tbsp. lemon juice, 1/2 tsp. lemon zest, and 3 Tbsp. reserved pasta cooking water. Stir to combine and bring to a simmer.Once simmering, transfer 2 Tbsp. sauce to a mixing bowl and set aside (reserve for salmon). -
5 Add Pasta and Finish Dish
Add cream base, beurre blanc butter, 1/4 tsp. salt, and pasta to hot pan. Stir occasionally until combined and sauce is slightly thickened, 1-2 minutes.
If too thick, add additional reserved pasta cooking water, 1 Tbsp. at a time, until desired consistency is reached.Remove from burner.Plate dish as pictured on front of card, topping salmon with reserved sauce. Flake salmon, if desired. Garnish pasta with shredded cheese and green portions of green onions. Bon appétit!
