Before You Cook

Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

    Cook pasta

    Bring a large pot of salted water to a boil. Once water is boiling, add pasta and cook until al dente, 8-10 minutes. Reserve 1/2 cup pasta water and drain. Set pasta aside.

    While pasta cooks

    Prep

    Halve and peel onion. Cut halves into 1/4" dice. Cut mushrooms into 1/4" slices. Mince chives.

    Return pot used for pasta to medium high heat.

    Add ground beef1/2 tsp salt and onions to hot pan. Break up meat until no pink remains and beef reaches a minimum internal tempeature of 160 degrees, 4-6 minutes.

    Start sauce

    When ground beef and onions are done, drain well. Return pan to medium heat and add 2 tsp. olive oil. Add mushrooms to hot pan and stir occasionally until browned, 4-6 minutes.

    Make sauce

    When mushrooms are done. Add cream sauce base, pasta water, onion salt, mirepoix broth, cream cheese, a pinch of pepper and bring to

    a simmer. Simmer until slightly thickened, 2-3 minutes. Remove from heat and add mozzarella and stir to combine. Let stand 5 minutes for sauce to thicken.

    Plate the meal

    Top with chopped chives
