Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

Customize It Instructions

  • If using ground turkey, roast until loaves reach minimum internal temperature, 20-25 minutes.

  1. 1

    Prepare the Ingredients

Trim zucchini and yellow squash ends, halve lengthwise, and cut into 1/2” half-moons. Zucchini quantity may vary, but total weight will remain the same. Don't worry; recipe instructions are not impacted.

    Stem and mince dill.

Halve and peel onion. Cut halves into 1" dice.

    Mince garlic.

  2. 2

    Start the Meatloaves

In a mixing bowl, combine panko and 1/4 tsp. water. Let sit, 1 minute.

After 1 minute, add ground beef, buttermilk-dill seasoning, 1/2 tsp. salt, and a pinch of pepper. Stir until throughly combined. Form mixture into four equally-sized, oval-shaped loaves, about 3" in length and 2" by height.

Place meatloaves on one half of prepared baking sheet.

Roast in hot oven, 10 minutes.

Meatloaves will finish cooking in a later step.

Carefully remove from oven and drain any excess liquid. Sheet will be hot! Use caution.

  3. 3

    Add the Vegetables

Combine zucchini, yellow squash, tomatoes, onions, and garlic on empty side of sheet. Toss with 2 tsp. olive oil, 1/2 tsp. salt, and a pinch of pepper. Spread into a single layer on their side. Sheet will be hot! Use a utensil.

If you receive one whole tomato instead, not to worry; simply core tomato, cut into 1/2" dice, and proceed with recipe instructions.

  4. 4

    Finish the Vegetables and Meatloaves

Roast in hot oven until vegetables are tender and meatloaves reach a minimum internal temperature of 160 degrees, 20-25 minutes.

Carefully remove sheet from oven and drain any excess liquid. Sheet will be hot! Use caution.

Stir 1/2 tsp. dill (reserve remaining for sauce) and a pinch of salt into vegetables, then evenly top with feta.

While vegetables and meatloaves roast, continue recipe.

  5. 5

    Make Sauce and Finish Dish

In a microwave-safe bowl, combine cream cheese, chimichurri (to taste), and 1 Tbsp. water. Kids not a fan of extra heat? Feel free to skip/reduce the chimichurri.

Microwave uncovered until cream cheese is melted, 45-60 seconds.

Carefully remove from microwave and stir in 1 tsp. reserved dill until combined.

Plate dish as pictured on front of card, topping meatloaf with sauce (to taste). Slice meatloaf, if desired. Kids not a fan of extra heat? Feel free to skip/reduce the sauce. Bon appétit!
