  • If using ground turkey, break up until turkey reaches minimum internal temperature, 6-8 minutes.

  • Add protein to meal as desired.

  1. 1

    Roast the Poblanos

Stem poblano peppers, seed, and cut into 1/2" dice. Poblano peppers can vary in spice level; most are mild, but a few can be quite hot. Wash hands and cutting board after prepping.

Place poblanos (to taste) on prepared baking sheet. Toss with 1 tsp. olive oil and garlic salt. Kids not a fan of extra heat? Feel free to skip/reduce the poblanos. Spread into a single layer.

Roast in hot oven until tender, 8-10 minutes.

    While poblanos roast, continue recipe.

  2. 2

    Roast the Filling

Drain and rinse beans in a colander/strainer.

After 8-10 minutes, carefully remove baking sheet from oven. Add corn and stir to combine. Push poblanos and corn to one side of sheet. Sheet will be hot! Use a utensil.

Add beans to empty side of sheet. Toss with 1 tsp. olive oil and a pinch of salt and pepper. Sheet will be hot! Use a utensil.

Roast again in hot oven until vegetables are heated through, 5-7 minutes.

Carefully remove sheet from oven. Let vegetables cool, 5 minutes.

  3. 3

    Mash and Finish the Filling

After 5 minutes, or once cool enough to handle, transfer bean mixture to a heat-safe mixing bowl. Mash until slightly chunky.

Stir corn and poblano mixture (to taste) and taco seasoning into bowl with beans until combined.

Reserve baking sheet. Replace foil and spray with cooking spray.

  4. 4

    Assemble the Flautas

Place tortillas on a clean, flat work surface. Evenly divide chipotle crema, filling, and cheese between tortillas, placing in center.

Roll tightly and place seam-side down on prepared baking sheet. Spray with cooking spray.

  5. 5

    Toast Flautas and Finish Dish

Bake flautas in hot oven until slightly browned, 10-12 minutes.

    Carefully remove from oven.

Plate dish as pictured on front of card, topping flautas with salsa (to taste), guacamole (to taste), and sour cream. Kids not a fan of extra heat? Feel free to skip/reduce the salsa and guacamole.

    Bon appétit!
