Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

1 Prepare the Ingredients
Quarter potatoes.
Trim and thinly slice green onions on an angle, keeping white and green portions separate.Stem poblano peppers, seed, and cut into 1/2" dice. Poblano peppers can vary in spice level; most are mild, but a few can be quite hot. Wash hands and cutting board after prepping. -
2 Make the Cheese Filling
In a mixing bowl, combine cream cheese and shredded cheese.

3 Form the Meatloaves
In another mixing bowl, combine ground turkey, panko, white portions of green onions, taco seasoning, and 1/2 tsp. salt.
Form turkey mixture into eight evenly-sized patties, about 1/4" thick. Place patties on a clean work surface. Divide cheese filling between four patties, topping evenly. Top with remaining four patties and pinch edges to seal into four evenly-sized loaves, about 3" in length and 2" by height. -
4 Roast the Meatloaves and Vegetables
Place stuffed meatloaves on one side of prepared baking sheet. Add potatoes and poblanos (to taste) to empty side of sheet and toss with enchilada sauce, 1/2 tsp. salt, and a pinch of pepper.
Roast in hot oven until turkey reaches a minimum internal temperature of 165 degrees, 30-35 minutes.Carefully remove baking sheet from oven. -
5 Finish the Dish
Plate dish as pictured on front of card, topping meatloaf with sour cream and green portions of green onions. Bon appétit!
