Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

Customize It Instructions

  • If using antibiotic free chicken, pat dry. Cook in a medium non-stick pan over medium heat with 1 tsp. olive oil until chicken reaches minimum internal temperature, 5-7 minutes per side.

    Start the Potatoes

    Cut potatoes into 1" dice.

    Place potatoes, 1 Tbsp. olive oil, and piri piri seasoning (use less if spice-averse) on prepared baking sheet. Kids not a fan of extra heat? Feel free to skip/reduce the piri piri seasoning.

    Massage oil and seasoning into potatoes. Spread into an even layer.

    Roast in hot oven, 20 minutes.

    While potatoes roast, continue recipe.

    Make Crema and Prepare Chicken

    In a mixing bowl, combine sour cream and chile and cumin rub. Set aside.

    Kids want to help? With supervision, have them help prepare the crema.

    Pat chicken dry. Season both sides with 1/4 tsp. salt and a pinch of pepper.

    Add the Chicken

    After 20 minutes, carefully remove sheet from oven. Stir potatoes and push to one side. Sheet will be hot! Use a utensil.

    Place chicken on now-empty side of sheet and evenly top with salsa (use less if spice-averse). Sheet will be hot! Use caution.

    Kids not a fan of extra heat? Feel free to skip/reduce the salsa.

    Finish the Potatoes and Chicken

    Roast in hot oven until potatoes are tender and chicken reaches a minimum internal temperature of 165 degrees, 13-18 minutes.

    Cutlet thickness can vary; if you receive a thinner cutlet, we recommend checking for doneness sooner.

    Carefully remove from oven. Evenly top chicken with shredded cheese.

    Roast again in hot oven until cheese is melted, 3-5 minutes.

    Carefully remove from oven.

    While potatoes and chicken roast, continue recipe.

    Heat Corn and Finish Dish

    Place corn and butter (to taste) in a microwave-safe bowl. Kids not a fan of extra heat? Feel free to skip/reduce the butter.

    Microwave uncovered until butter is melted and corn is heated through, 2-4 minutes.

    Carefully remove from microwave and stir to combine.

    Plate dish as pictured on front of card, topping potatoes with crema. Bon appétit!
