Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

Customize It Instructions

If using antibiotic free chicken, pat dry. Cook in a medium non-stick pan over medium heat with 1 tsp. olive oil until chicken reaches minimum internal temperature, 5-7 minutes per side.

1 Start the Potatoes
Cut potatoes into 1" dice.
Place potatoes, 1 Tbsp. olive oil, and piri piri seasoning (use less if spice-averse) on prepared baking sheet. Kids not a fan of extra heat? Feel free to skip/reduce the piri piri seasoning.Massage oil and seasoning into potatoes. Spread into an even layer.Roast in hot oven, 20 minutes.While potatoes roast, continue recipe. -
2 Make Crema and Prepare Chicken
In a mixing bowl, combine sour cream and chile and cumin rub. Set aside.
Kids want to help? With supervision, have them help prepare the crema.Pat chicken dry. Season both sides with 1/4 tsp. salt and a pinch of pepper. -
3 Add the Chicken
After 20 minutes, carefully remove sheet from oven. Stir potatoes and push to one side. Sheet will be hot! Use a utensil.
Place chicken on now-empty side of sheet and evenly top with salsa (use less if spice-averse). Sheet will be hot! Use caution.Kids not a fan of extra heat? Feel free to skip/reduce the salsa. -
4 Finish the Potatoes and Chicken
Roast in hot oven until potatoes are tender and chicken reaches a minimum internal temperature of 165 degrees, 13-18 minutes.
Cutlet thickness can vary; if you receive a thinner cutlet, we recommend checking for doneness sooner.Carefully remove from oven. Evenly top chicken with shredded cheese.Roast again in hot oven until cheese is melted, 3-5 minutes.Carefully remove from oven.While potatoes and chicken roast, continue recipe. -
5 Heat Corn and Finish Dish
Place corn and butter (to taste) in a microwave-safe bowl. Kids not a fan of extra heat? Feel free to skip/reduce the butter.
Microwave uncovered until butter is melted and corn is heated through, 2-4 minutes.Carefully remove from microwave and stir to combine.Plate dish as pictured on front of card, topping potatoes with crema. Bon appétit!
