-
If using antibiotic free chicken, pat dry. Cook in a medium non-stick pan with 2 tsp. olive oil over medium heat until chicken reaches minimum internal temperature, 5-7 minutes per side.
-
1 Start the Potatoes and Beets
Cut potatoes into 1/4" wedges.
Trim ends off beet, peel, and cut into 1/2" dice. Tip: Beets are delicious, but tend to stain. Save beets for the end when preparing ingredients, and clean your cutting board after preparing.Place potatoes on one half of prepared baking sheet. Toss with 2 tsp. olive oil and 2/3 the seasoned salt (reserve remaining for chicken). Spread into a single layer on one side.Place beets on empty side of sheet. Toss with 1 tsp. olive oil and a pinch of salt and pepper.Roast in hot oven, 15 minutes. While potatoes and beets roast, continue recipe. -
2 Prepare the Ingredients
Trim woody ends off asparagus. Cut into 2" pieces.
Mince sage.Pat chicken dry. Season both sides with poultry seasoning and remaining seasoned salt. -
3 Add the Asparagus and Chicken
After 15 minutes, carefully remove sheet from oven. Push potatoes to 1/3 of sheet. Sheet will be hot! Use a utensil.
Stir asparagus and a pinch of salt into beets until combined. Spread into a single layer in center of sheet. Sheet will be hot! Use a utensil.Place chicken on now-empty side of sheet. -
4 Roast the Meal
Roast in hot oven until vegetables are tender and chicken reaches a minimum internal temperature of 165 degrees, 13-18 minutes.
Cutlet thickness can vary; if you receive a thinner cutlet, we recommend checking for doneness sooner.Carefully remove sheet from oven. While meal roasts, continue recipe. -
5 Make Sauce and Finish Dish
In a microwave-safe bowl, combine sage, minced garlic and parsley, creme fraiche, a pinch of salt and pepper, and 1 Tbsp. water.
Microwave uncovered until heated through, 20-30 seconds.Carefully remove from microwave and stir to combine.Plate dish as pictured on front of card, topping chicken with sauce. Garnish asparagus-beet mixture with cheese. Bon appétit!
