Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

- Ground Turkey 165° F |
- Ground Pork 160° F

If using ground beef, roast until meatballs reach minimum internal temperature, 17-20 minutes.

1 Start the Potatoes
Cut potatoes into 1/2" wedges.
Place potatoes on prepared baking sheet and toss with 1 Tbsp. olive oil and half the garlic salt (reserve remaining for meatballs). Spread into a single layer.Roast in hot oven, 10 minutes.While potatoes roast, continue recipe. -
2 Add the Meatballs
In a mixing bowl, combine ground turkey, panko, remaining garlic salt, 1/4 tsp. pepper, and 1/4 the pesto (reserve remaining for sauce). Form meat mixture into 16 evenly-sized meatballs.
After 10 minutes, carefully remove potatoes from oven. Add Italian seasoning and a pinch of salt. Toss to combine and push to one side of sheet. Sheet will be hot! Use a utensil.Add meatballs to now-empty side of sheet and top with 1 tsp. olive oil. -
3 Finish the Potatoes and Meatballs
Roast in hot oven until potatoes are tender and meatballs reach a minimum internal temperature of 165 degrees, 15-20 minutes.
Carefully remove from oven. -
4 Toast the Sandwiches
Open rolls slightly (keeping rolls intact) and fill with four meatballs.
Place sandwiches on empty side of sheet and evenly top with cheese.Bake in hot oven until rolls are slightly toasted and cheese is melted, 2-3 minutes.Carefully remove from oven.While sandwiches toast, continue recipe. -
5 Prepare Tomato, Make Sauce, and Finish Dish
Core tomato and cut into 1/4" dice.
In a mixing bowl, combine mayonnaise, remaining pesto, and a pinch of salt. Kids want to help? With supervision, have them help make the sauce.Plate dish as pictured on front of card, topping sandwich with tomatoes and sauce. Bon appétit!
