-
If using antibiotic free chicken, pat dry. Cook in a medium non-stick pan over medium heat with 1 tsp. olive oil until chicken reaches minimum internal temperature, 5-7 minutes per side.
-
If using top round steak, pat dry. Cook in a medium non-stick pan over medium heat with 1 tsp. olive oil until steak reaches desired doneness, or 3-5 minutes per side for medium/medium-well. Rest, 3 minutes. Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.

1 Prepare the Potatoes and Puff Pastry
Cut potatoes into 1" dice.
Place potatoes, 2 tsp. olive oil, piri piri seasoning (use less if spice-averse), and a pinch of salt on one half of prepared baking sheet. Massage oil and seasonings into potatoes. Spread into a single layer on their side. Have a little sous chef around? With supervision, have them help season and massage potatoes. Kids not a fan of extra heat? Feel free to skip/reduce the piri piri seasoning.Remove puff pastry from refrigerator. Remove any paper between puff pastry squares, if necessary. If paper is sticking, place puff pastry in freezer until firm, 5 minutes.Halve puff pastry, lengthwise, to make 4 even rectangles. Using the tip of a knife, draw diagonal lines on pastry, about 1/2" apart. Draw another set of diagonal lines crosswise from the first, forming a crosshatch. This is called scoring. Place on empty side of sheet. -
2 Start the Vegetables and Puff Pastry
Roast in hot oven until potatoes and puff pastry are slightly browned, 10-15 minutes.
Carefully remove from oven. While potatoes and pastry roast, continue recipe. -
3 Prepare the Ingredients
Trim woody ends off asparagus.
Coarsely chop spinach. In a microwave-safe bowl, combine spinach, cream cheese, garlic and parsley seasoning, shredded cheese, and 2 tsp. water. Microwave uncovered until spinach is wilted, 30-60 seconds.Carefully remove from microwave and stir to combine. Set aside.Pat salmon dry. Season flesh side with garlic pepper and 1/4 tsp. salt. -
4 Assemble the Asparagus and Salmon
After 10-15 minutes, carefully remove sheet from oven and transfer puff pastry to a plate. Push potatoes to 1/3 of sheet. Sheet will be hot! Use a utensil.
Place asparagus, 2 tsp. olive oil, and 1/4 tsp. salt in center of sheet. Toss to combine and spread into an even layer in center. Sheet will be hot! Use a utensil.Place salmon on now-empty side of sheet and evenly top with spinach mixture. Sheet will be hot! Use a utensil. -
5 Finish Vegetables and Salmon and Finish Dish
Roast in hot oven until vegetables are tender and salmon reaches a minimum internal temperature of 145 degrees, 12-15 minutes.
If asparagus are thinner than a pencil, check for doneness sooner.Whiled dish roasts, mince chives.Carefully remove from oven. Stir chives into potatoes until combined. Sheet will be hot! Use a utensil.Plate dish as pictured on front of card, topping salmon with puff pastry. Bon appétit!
