Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |

  • Ground Turkey 165° F |

    Prepare the Ingredients

    Preheat oven to 425 degrees. Thoroughly rinse any fresh produce and pat dry. Combine sweet potatoes, corn, garlic salt, green hatch chiles (use half if spice averse), and 1 tsp. olive oil in provided tray. Spread into an even layer. Top with dollops of cream cheese. Cream cheese will melt as meal bakes. Bake uncovered in hot oven, 15 minutes.

    Add the Chicken

    Carefully, remove tray from oven. Stir cream cheese into vegetables, then push to one side. Tray will be hot! Use a utensil. Pat chicken dry, and season both sides with a pinch of salt and pepper. Place chicken breasts in empty side of tray. Top evenly with aioli and crispy onions, pressing gently to adhere.

    Finish the Dish

    Bake again uncovered until sweet potatoes are tender and chicken reaches a minimum internal temperature of 165 degrees, 20-25 minutes. Carefully remove from oven. Stir vegetables to combine and top with cotija cheese. Bon appétit!
