1 Prepare the Ingredients
Halve lemon. Cut one half into wedges and juice the other half.
Line a microwave-safe plate with a paper towel. Place bacon on towel-lined plate and spread into a single layer. Microwave uncovered until crispy, 45-60 seconds.Carefully remove from microwave.In a mixing bowl, combine mayonnaise and mustard (to taste). Set aside.Combine panko and a pinch of salt on a plate and spread into a single layer.Pat chicken dry. Season both sides with 1/4 tsp. salt and 1/4 tsp. pepper. Evenly spread mayonnaise mixture on both sides of chicken.Place chicken onto plate with panko and flip until coated on both sides, pressing gently to adhere. -
2 Cook the Chicken
Place a large non-stick pan over medium heat and add 2 Tbsp. olive oil.
Add chicken to hot pan. Cook until browned and chicken reaches a minimum internal temperature of 165 degrees, 5-7 minutes per side.Remove from burner.While chicken cooks, continue recipe. -
3 Make the Sauce
Place another large non-stick pan over medium heat and add 1 tsp. olive oil.
Add peas and a pinch of salt to hot pan. Stir occasionally until peas are heated through, 2-3 minutes.Add cream base, vegetable base, Swiss cheese, cheddar cheese, 1/3 cup water, and 1/4 tsp. salt. Stir to combine and bring to a simmer.Once simmering, add a pinch of salt and stir occasionally until sauce is slightly thickened, 2-3 minutes.If too thick, add additional water, 1 tsp. at a time, until desired consistency is reached. -
4 Add Orzo and Finish Dish
Add orzo to hot pan. Stir occasionally until combined and heated through, 2-3 minutes.
Add 2 tsp. lemon juice and stir occasionally until combined, 1-2 minutes.Remove from burner.Plate dish as pictured on front of card, topping orzo with chicken. Slice chicken, if desired. Garnish with crispy bacon and squeeze lemon wedges over to taste. Bon appétit!
