If using antibiotic free chicken, pat dry. Cook until chicken reaches minimum internal temperature, 5-7 minutes per side.

If using salmon, pat dry. Add salmon, skin-side up first, and cook until salmon reaches minimum internal temperature, 3-4 minutes per side.

1 Prepare the Ingredients
Cut sweet potatoes into 1" dice.
Place sweet potatoes in a microwave-safe bowl and cover with a damp paper towel. Microwave covered until tender, 7-9 minutes, stirring once halfway through.While sweet potatoes microwave, halve tomatoes. If you receive one whole tomato instead, not to worry; simply core tomato, cut into 1/2" dice, and proceed with recipe instructions.Pat chicken dry and season both sides with lemon n herb seasoning and a pinch of pepper. -
2 Cook the Chicken
Place a large non-stick pan over medium heat and add 2 tsp. olive oil.
Add chicken to hot pan and cook until browned and chicken reaches a minimum internal temperature of 165 degrees, 3-5 minutes per side.Cutlet thickness can vary; if you receive a thinner cutlet, we recommend checking for doneness sooner.Remove from burner.While chicken cooks, continue recipe. -
3 Cook the Ratatouille
Place another large non-stick pan over medium-high heat and add 2 tsp. olive oil.
Add sweet potatoes, zucchini, and 1/4 tsp. salt to hot pan. Stir occasionally until zucchini are slightly tender, 5-7 minutes. -
4 Add Tomatoes and Finish Dish
Add tomatoes, garlic pepper, and garlic salt to hot pan. Stir occasionally until tomatoes soften and zucchini are tender, 2-3 minutes.
Remove from burner. Stir in red pepper pesto.Plate dish as pictured on front of card, topping chicken with softened basil pesto butter and garnishing ratatouille with cheese. Bon appétit!
