Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

If using ground beef, break up until beef reaches minimum internal temperature, 4-6 minutes.

If using ground turkey, break up until turkey reaches minimum internal temperature, 6-8 minutes.

1 Prepare Ingredients and Assemble Cucumber Slaw
Trim cucumber and thinly slice into rounds.
Drain mandarin oranges, reserving juice.Trim and thinly slice green onions on an angle, keeping white and green portions separate.In a mixing bowl, combine cucumbers, slaw mix, vinegar, and a pinch of salt. Set aside. -
2 Cook the Pork
Place a large non-stick pan over medium-high heat and add 2 tsp. olive oil.
Add ground pork, white portions of green onions, 1/4 tsp. salt, and a pinch of pepper to hot pan. Break up meat until no pink remains and pork reaches a minimum internal temperature of 160 degrees, 6-8 minutes. -
3 Add the Oranges and Sauce
Add mandarin oranges, orange ginger sesame sauce (to taste), half the soy sauce (reserve remaining for rice), 2 tsp. reserved mandarin orange juice, and a pinch of salt to hot pan. Stir often until combined and pork is coated, 2-3 minutes.
Remove from burner.While pork mixture cooks, continue recipe. -
4 Heat the Edamame Rice
Carefully massage rice in bag to break up any clumps.
In a microwave-safe bowl, combine rice, edamame, umami seasoning, remaining soy sauce, 1/4 tsp. salt, and 1 tsp. olive oil.Microwave uncovered until heated through, 3-4 minutes.Carefully remove from microwave. Stir in 1 Tbsp. softened butter and green portions of green onions. Rest, 2 minutes. Fluff rice with a fork. -
5 Heat Tortillas and Finish Dish
Wrap tortillas in a damp paper towel. If tortillas come folded, keep folded.
Microwave until heated through, 30-60 seconds.Carefully remove from microwave.Plate dish as pictured on front of card, filling tortillas with pork mixture (to taste) and cucumber slaw. Bon appétit!
