If using antibiotic free chicken, pat dry. Cook in a medium non-stick pan with 2 tsp. olive oil over medium heat until chicken reaches minimum internal temperature, 5-7 minutes per side.

If using ground beef, cook in a medium non-stick pan over medium heat. Break up until beef reaches minimum internal temperature, 4-6 minutes.

If using ground turkey, cook in a medium non-stick pan with 2 tsp. olive oil over medium heat. Break up until turkey reaches minimum internal temperature, 6-8 minutes.

1 Prepare the Ingredients
Stem and tear cilantro.
In one provided tray, add ground pork and break into bite-sized pieces. Spread into a single layer and evenly top with 1 tsp. olive oil.Carefully massage rice in bag to break up any clumps and remove from packaging. In second provided tray, combine rice, corn, onion salt, chicken base, and 1 Tbsp. water. Spread into an even layer and cover with foil. -
2 Bake the Meal
Bake both trays (ground pork uncovered, rice mixture covered) in hot oven until rice is heated through and pork reaches a minimum internal temperature of 160 degrees, 20-25 minutes.
Carefully remove both trays from oven and drain any excess liquid from pork. Tray will be hot! Use caution.Stir cilantro and a pinch of salt into rice mixture until combined. Tray will be hot! Use a utensil. Spread into an even layer. -
3 Add Cheese and Finish Meal
Break up ground pork again into bite-sized pieces. Stir in crushed tomatoes, pesto (to taste), taco seasoning, and a pinch of salt. Evenly top with cheese.
Bake again uncovered in hot oven until cheese is melted, 2-4 minutes.Carefully remove from oven.To serve, top rice mixture with ground pork mixture. Garnish with sour cream and tortilla strips. Bon appétit!
