Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

If using ground beef, cook in a medium non-stick pan over medium heat. Break up until beef reaches minimum internal temperature, 4-6 minutes.

If using ground turkey, cook in a medium non-stick pan with 2 tsp. olive oil over medium heat. Break up until turkey reaches minimum internal temperature, 6-8 minutes.

1 Start the Filling
Place mixed peppers in one provided tray and toss with 1 tsp. olive oil and half the garlic salt (reserve remaining for pork). Spread into a single layer.
Place ground pork in second provided tray and break into bite-sized pieces. Spread into a single layer and evenly top with 1 tsp. olive oil.Bake uncovered in hot oven until peppers are tender and pork reaches a minimum internal temperature of 160 degrees, 16-18 minutes.While pork and peppers bake, continue recipe. -
2 Finish the Filling
Drain and rinse beans in a colander/strainer.
In a heat-safe mixing bowl, combine tomato sauce and enchilada sauce (to taste). Kids not a fan of extra heat? Feel free to skip/reduce the enchilada sauce. Reserve 1/4 cup sauce mixture and set aside.Stir beans into mixing bowl with sauce until combined.After 16-18 minutes, carefully remove both trays from oven and drain any excess liquid. Stir remaining garlic salt and fajita seasoning into pork until combined. Trays will be hot! Use a utensil/caution.Transfer pork and peppers to mixing bowl with sauce and beans. Stir in half the cheese (reserve remaining for topping) and fiesta seasoning until combined.Wipe both trays clean and spray with cooking spray. -
3 Assemble and Bake Casserole and Finish Meal
Place 2 tortillas across the bottom of each tray (some overlap is OK). Evenly top with 1/4 the filling and spread into a single layer. Repeat with remaining filling and tortillas.
Evenly top trays with reserved sauce mixture (to taste) and remaining cheese. Cover trays with foil.Bake covered in hot oven until cheese is melted and tortillas are heated through, 15-20 minutes.Carefully remove from oven and uncover.Bake trays again uncovered in hot oven until tortilla edges are slightly browned, 5-7 minutes.Carefully remove from oven.To serve, top casserole with sour cream.
