Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |
- Seafood 145° F |
- Chicken 165° F |

- Ground Turkey 165° F |
- Ground Pork 160° F

1 Prepare the Potatoes
Peel potatoes, if desired. Slice into thin rounds.
Shingle potatoes on one prepared baking sheet. Drizzle with 1 Tbsp. olive oil and season all over with taco seasoning and 1/4 tsp. salt. -
2 Prepare Ingredients and Make Chipotle Ketchup
Core tomato and cut into 1/2" dice.
Trim and thinly slice green onions, keeping white and green portions separate.In a mixing bowl, combine ketchup and half the pesto (to taste; reserve remaining for meatloaves). Set aside. -
3 Form the Meatloaves
In another mixing bowl, combine ground pork, white portions of green onions, panko, remaining pesto (use less if spice-averse), 1/2 tsp. salt, and a pinch of pepper.
Form mixture into four equally-sized loaves.Place loaves on second prepared baking sheet and top with chipotle ketchup (use less if spice-averse). -
4 Roast the Potatoes and Meatloaves
Roast potatoes in hot oven until tender and golden-brown, 25-30 minutes.
Roast meatloaves in hot oven until pork reaches a minimum internal temperature of 160 degrees, 28-32 minutes.Carefully remove both baking sheets from oven. Top potatoes evenly with cheese and let melt. -
5 Finish the Dish
Plate dish as pictured on front of card, topping potatoes with sour cream, tomatoes, and green portions of green onions. Bon appétit!
