Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |
- Seafood 145° F |
- Chicken 165° F |
- Ground Beef 160° F |
- Ground Turkey 165° F |
- Ground Pork 160° F

1 Start filling
Drain and rinse black beans. Place a large pan on medium heat. Add 2 tsp olive oil and diced peppers to hot pan. Cook peppers start to soften 3-5 minutes. Add corn and cook 2-3 minutes more.

2 Finish filling
Add black beans, cream cheese and the taco seasoning to the pan with corn and peppers. Stir often, lightly mashing the black beans. Cook until everything is heated through. 1-2 minutes. When everything is hot, remove from heat and stir in half the cheese. Place rice in a microwave safe bowl and add amarillo seasoning, 2tsp olive oil. Toss to combine. Cook until heated, 4-6 minutes.

3 Make Flautas
Place tortillas on a clean work surface. Divide filling and remaining cheese equally among tortillas, placing in center. Roll tightly and place seam-side down on prepared baking sheet.
Spray taquitos with cooking spray. -
4 Plate the meal
Broil taquitos under hot broiler until crispy and browned, 2-4 minutes.
Don't text and broil! Keep an eye on oven as taquitos may burn easily under broiler. Serve with salsa
