To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

If using ground turkey, bake uncovered in hot oven until meatloaves reach minimum internal temperature, 30-35 minutes.

1 Prepare the Carrots
Place carrots in a microwave-safe bowl and cover with a damp paper towel.
Microwave covered until slightly tender, 4-6 minutes.Carefully remove carrots from microwave and drain any excess liquid.Transfer carrots to one provided tray and combine with 1 tsp. olive oil, 1/4 tsp. salt, and a pinch of chimichurri seasoning (reserve remaining for meatloaves). Massage oil and seasonings into carrots. Spread into an even layer.Reserve bowl; no need to wipe clean. -
2 Form the Meatloaves
Tear spinach.
In a mixing bowl, combine spinach, 2/3 the softened cream cheese (reserve remaining for mashed potatoes), shredded cheese, and a pinch of pepper. Set aside.In another mixing bowl, combine panko and 1/4 cup water. Let sit, 1 minute.After 1 minute, add ground beef, remaining chimichurri seasoning, 1/4 tsp. pepper, and 1/2 tsp. salt. Stir until completely combined. Form mixture into four equally-sized, oval-shaped loaves, about 3" in length and 2" by height.Place meatloaves in second provided tray and evenly top with spinach-cream cheese mixture. -
3 Bake Meal and Heat Mashed Potatoes
Bake both trays uncovered in hot oven until carrots are tender and meatloaves reach a minimum internal temperature of 160 degrees, 20-25 minutes.
While meal bakes, place mashed potatoes in reserved microwave-safe bowl and vigorously stir to combine.Microwave uncovered until heated through, 2-3 minutes.Carefully remove from microwave. Add remaining cream cheese, half the butter (reserve remaining for carrots), and a pinch of salt. Vigorously stir to combine.Carefully remove both trays from oven.To serve, stir remaining butter and honey into carrots until melted. Tray will be hot! Use a utensil! Bon appétit!
