If using antibiotic free chicken, pat dry. Cook until chicken reaches minimum internal temperature, 5-7 minutes per side.

If using sirloin steaks, follow same instructions.

1 Start the Mashed Potatoes
Peel and cut potatoes into large evenly-sized chunks.
Bring a medium pot with potato chunks covered by water to a boil.Once boiling, cook until fork-tender, 14-18 minutes.Remove from burner. Reserve 1/2 cup potato cooking water. Drain potatoes in a colander/strainer and return to pot.While potatoes cook, continue recipe. -
2 Prepare Ingredients and Make Rosemary Butter
Cut broccoli into 1" pieces.
Stem and mince rosemary.In a mixing bowl, combine softened plain butter, 1 tsp. rosemary (to taste), lemon juice, and a pinch of garlic and parsley seasoning (reserve remaining for broccoli). Set aside.Pat steaks dry. Steak coloration may vary upon arrival due to packaging processes; steak quality and flavor will not be impacted. Season both sides with garlic salt and 1/4 tsp. pepper. -
3 Roast the Broccoli
Place broccoli on prepared baking sheet and toss with 2 tsp. olive oil, 1/4 tsp. salt, and remaining garlic and parsley seasoning. Spread into an even layer.
Roast in hot oven, 10 minutes.Carefully remove from oven. Evenly top with cheese.Roast again in hot oven until broccoli is browned and fork-tender, 4-6 minutes.Carefully remove from oven.While broccoli roasts, continue recipe. -
4 Cook the Steaks
Summertime, and the grilling is easy! To grill these steaks, heat grill to medium. Follow same instructions, grilling until browned and steaks reach a minimum internal temperature of 145 degrees, 3-5 minutes per side.
Place a large non-stick pan over medium heat and add 2 tsp. olive oil.Add steaks to hot pan. Cook until steaks reach desired doneness, or 3-5 minutes per side for medium/medium-well.Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.Remove from burner. Rest, 3 minutes. -
5 Finish Mashed Potatoes and Finish Dish
Add truffle butter (to taste), creme fraiche, and truffle salt (to taste) to pot with potatoes. Mash until combined and smooth.
If too thick, add reserved potato cooking water, 1 Tbsp. at a time, until desired consistency is reached.Plate dish as pictured on front of card, topping steak with rosemary butter. Bon appétit!
