If using ground beef, bake uncovered in hot oven until meatloaves reach minimum internal temperature, 25-30 minutes.

1 Start the Meatloaves
Combine panko and 2 Tbsp. water in a mixing bowl. Let sit, 1 minute.
After 1 minute, add ground pork, barbeque seasoning (use less if spice-averse), 1/2 tsp. salt, and a pinch of pepper. Mix until completely combined. Form into four equally-sized meatloaves.Place loaves in one provided tray. Top with half the BBQ sauce (reserve remaining for garnish).Bake uncovered in hot oven, 20 minutes.Meatloaves will finish baking in a later step.While meatloaves bake, continue recipe. -
2 Prepare Potatoes, Crisp Bacon, and Add Brown Sugar
In second provided tray, add mashed potatoes (no need to drain), cream cheese, half the shredded cheese (reserve remaining for garnish), and ranch seasoning. Stir vigorously to combine. Cream cheese will melt as meal bakes.
Cover tightly with foil.Line a microwave-safe plate with a paper towel. Spread bacon evenly on towel-lined plate.Microwave until crisp, 1-2 minutes.Carefully remove from microwave.After 20 minutes, carefully remove meatloaf tray from oven. Top meatloaves evenly with brown sugar. -
3 Bake the Meal
Bake both trays (potatoes covered, meatloaves uncovered) in hot oven until potatoes are heated through and meatloaves reach a minimum internal temperature of 160 degrees, 15-18 minutes.
Carefully remove both trays from oven. Uncover potatoes and stir vigorously until combined and smooth. Tray will be hot! Use a utensil.To serve, top mashed potatoes with remaining shredded cheese and crispy bacon. Garnish meatloaves with remaining BBQ sauce (using a clean utensil). Bon appétit!
