-
If using filets mignon, follow same instructions.

1 Roast the Potatoes
Cut potatoes into 1/4" rounds.
Place potatoes on prepared baking sheet. Toss with 2 tsp. olive oil, 1/4 tsp. salt, and 1/4 tsp. pepper. Spread into an even layer (some overlap is OK).Roast in hot oven, 20 minutes.Carefully remove from oven and evenly top with cheese. Sheet will be hot! Use caution.Roast again in hot oven until cheese is melted and potatoes are tender, 5-8 minutes.Carefully remove from oven. While potatoes roast, continue recipe. -
2 Prepare the Ingredients
Trim and thinly slice green onions, keeping white and green portions separate.
Mince garlic. -
3 Cook the Steaks
Pat steaks dry and season both sides with half the piri piri seasoning (use less if spice-averse; remaining is yours to use as you please!). Steak coloration may vary upon arrival due to packaging processes; steak quality and flavor will not be impacted.
Place a medium non-stick pan over medium heat and add 1 tsp. olive oil.Add steaks to hot pan. Cook until steaks reach desired doneness, or 3-5 minutes per side for medium/medium-well.Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner. Transfer steaks to a plate and tent with foil. Rest, 3 minutes. Wipe pan clean and keep over medium heat. -
4 Make the Sauce
Add 1 tsp. olive oil, garlic, and white portions of green onions to hot pan. Stir often until fragrant, 1-2 minutes.
Add tomatoes, chile peppers (to taste), a pinch of salt, and 1 Tbsp. butter. Stir to combine and bring to a simmer.Once simmering, remove from burner. While sauce cooks, continue recipe. -
5 Make Crema and Finish Dish
In a mixing bowl, combine green portions of green onions, sour cream, a pinch of salt, and 1 tsp. water.
Plate dish as pictured on front of card, topping steak with sauce (to taste). Slice steak, if desired. Garnish potatoes with crema. Bon appétit!
