If using ground beef, roast until loaves reach minimum internal temperature, 20-25 minutes.

1 Start the Vegetables and Meatloaves
Peel, trim, and cut carrot into 1/4" slices on an angle. If carrot is larger than 1" in diameter, halve before slicing.
Place carrots, 2 tsp. olive oil, 1/4 tsp. salt, and a pinch of pepper on one half of prepared baking sheet. Massage oil and seasonings into carrots. Spread into an even layer on their side.In a mixing bowl, combine ground turkey, panko, sour cream, half the chimichurri seasoning (reserve remaining for sauce), and 1/4 tsp. salt.Form mixture into two equally-sized, oval-shaped loaves, about 3" in length and 2" by height. Place on empty side of baking sheet.Roast in hot oven, 10 minutes.While carrots and meatloaves roast, continue recipe. -
2 Prepare the Ingredients
Trim yellow squash ends and cut into 1/2" rounds.
Halve lemon lengthwise. Cut one half into wedges and juice the other half.In another mixing bowl, combine marinara sauce and remaining chimichurri. Set aside. -
3 Add the Squash and Sauce
After 10 minutes, carefully remove sheet from oven.
Stir yellow squash and 2 tsp. olive oil into carrots until combined. Sheet will be hot! Use a utensil.Evenly top meatloaves with sauce. Sheet will be hot! Use a utensil. -
4 Finish the Vegetables and Meatloaves and Finish Dish
Roast in hot oven until vegetables are tender and meatloaves reach a minimum internal temperature of 165 degrees, 10-15 minutes.
Carefully remove sheet from oven. Stir softened butter and 2 tsp. lemon juice into vegetables until combined. Sheet will be hot! Use a utensil.To serve, top meatloaf with cheese. Slice meatloaf, if desired. Squeeze lemon wedges over to taste. Bon appétit!
