Before You Cook
Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |
- Seafood 145° F |
- Chicken 165° F |
- Ground Beef 160° F |
- Ground Turkey 165° F |
- Ground Pork 160° F

1 Prepare the Rice and Beans
Drain and rinse beans.
In one provided tray, combine rice, beans, corn, salsa (to taste), half the fiesta seasoning (reserve remaining for shrimp), and 1/4 tsp. salt. Top evenly with cheese. Cover tray with foil. -
2 Prepare the Shrimp
Drain shrimp thoroughly and pat dry.
In second provided tray, combine shrimp, 2 tsp. olive oil, enchilada sauce, remaining fiesta seasoning, and butter. Butter will melt as meal heats. -
3 Bake the Meal
Bake both trays (shrimp uncovered, rice covered) in hot oven until rice is heated through and shrimp reach a minimum internal temperature of 145 degrees, 18-20 minutes.
To serve, top rice with shrimp and garnish with tortilla strips. Bon appétit!
