Meatlovers! If using protein, cook in a medium non-stick pan over medium heat with 1 tsp. olive oil.

If using antibiotic free chicken, pat dry. Cook until chicken reaches minimum internal temperature, 5-7 minutes per side.

If using salmon, pat dry. Add salmon, skin-side up first, and cook until salmon reaches minimum internal temperature, 3-4 minutes per side.

If using steak strips, pat dry, coarsely chop, then separate pieces. Stir occasionally until steak reaches minimum internal temperature, 4-6 minutes. Rest, 3 minutes.

Add protein to meal as desired.

1 Cook the Zucchini
Place a large non-stick pan over medium-high heat and add 2 tsp. olive oil.
Add zucchini and a pinch of salt and pepper to hot pan. Stir occasionally until slightly browned and tender, 6-8 minutes.Add minced garlic and parsley and stir occasionally until fragrant, 1-2 minutes.Remove from burner.While zucchini cooks, continue recipe. -
2 Start the Sauce
Place another large non-stick pan over medium-high heat.
Add 1 cup water, cream base, mirepoix base, 1/4 tsp. salt, and a pinch of pepper to hot, dry pan. Stir to combine and bring to a simmer. -
3 Add the Tortellini
Once simmering, add tortellini to hot pan. Stir occasionally until combined and tortellini are tender, 5-7 minutes.

4 Finish Sauce and Finish Dish
Add peas, Sicilian sauce (to taste), half the cheese (reserve remaining for garnish), zucchini, and a pinch of salt to hot pan. Kids not a fan of extra heat? Feel free to skip or reduce the Sicilian sauce.
Stir often until sauce is slightly thickened, 2-3 minutes.If too thick, add additional water, 1 tsp. at a time, until desired consistency is reached.Remove from burner.Plate dish as pictured on front of card, topping tortellini with remaining cheese. Bon appétit!
