To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

If using ground beef, bake uncovered in hot oven until meatballs reach minimum internal temperature, 20-25 minutes.

If using ground turkey, bake uncovered in hot oven until meatballs reach minimum internal temperature, 22-25 minutes.

1 Start the Meatballs
Remove Italian sausage from casing, if necessary.
In a mixing bowl, combine panko and 1/4 cup water. Rest, 1 minute.After 1 minute, add ricotta and sausage. Stir until completely combined. Form mixture into 16 equally-sized meatballs and evenly divide between both provided trays. Top each tray with 1 tsp. olive oil.Bake both trays uncovered in hot oven, 15 minutes.Meatballs will finish cooking in a later step.Carefully remove from oven. -
2 Finish Meatballs and Toast Ciabattas
Evenly divide marinara between both trays. Add a pinch of salt and pepper and 2 Tbsp. water to each tray. Stir until combined. Trays will be hot! Use a utensil. Cover both trays with foil.
Separate ciabatta halves. Evenly top cut-sides of ciabattas with pesto and spread into an even layer.Bake both trays covered in hot oven until sauce is heated through and meatballs reach a minimum internal temperature of 160 degrees, 10-15 minutes.While meatballs bake, place ciabatta halves directly on oven rack, cut-sides up. Toast in hot oven until slightly browned, 3-4 minutes.Carefully remove both trays and ciabattas from oven. -
3 Heat Pasta and Finish Meal
In a microwave-safe bowl, combine pasta and 1 tsp. water. Cover with a damp paper towel.
Microwave covered until heated through, 2-3 minutes.Carefully remove from microwave.Evenly divide pasta between each tray and stir to combine. Trays and pasta will be hot! Use a utensil.To serve, top pasta with grated cheese. Bon appétit!
