If using ground beef, bake uncovered in hot oven until meatballs reach minimum internal temperature, 20-25 minutes.

If using ground turkey, bake uncovered in hot oven until meatballs reach minimum internal temperature, 22-25 minutes.

1 Start the Meatballs and Peppers
In a mixing bowl, combine panko, soy sauce, and 2 Tbsp. water. Let sit, 1 minute.
After 1 minute, add ground pork and half the garlic salt (reserve remaining for rice). Stir until throughly combined. Form meat mixture into 16 equally-sized meatballs. Evenly divide meatballs between both provided trays.Evenly divide broccoli and mixed peppers between both trays. Spread into an even layer.Evenly top each tray with 1 tsp. olive oil and a pinch of salt.Bake both trays uncovered in hot oven, 15 minutes.Meatballs will finish cooking in a later step.While meatball mixture bakes, continue recipe. -
2 Finish the Meatballs and Peppers
In another mixing bowl, combine coconut milk, 1/4 cup water, ramen base, piri piri seasoning (to taste), and cornstarch. Don't worry if coconut milk has solidified. It is part of natural processes. Break up as needed. Kids not a fan of extra heat? Feel free to skip/reduce the piri piri seasoning.
After 15 minutes, carefully remove trays from oven and drain any excess liquid. Trays will be hot! Use caution.Evenly divide sauce mixture (to taste) between both trays and stir to combine. Trays will be hot! Use a utensil.Bake again uncovered in hot oven until sauce is heated through, vegetables are tender, and meatballs reach a minimum internal temperature of 160 degrees, 8-10 minutes.Carefully remove from oven.While meatball mixture bakes, continue recipe. -
3 Heat Rice and Finish Meal
Carefully massage rice in bag to break up any clumps and remove from packaging. Place rice in a microwave-safe bowl.
Microwave uncovered until heated through, 3-4 minutes.Carefully remove from microwave. Rest, 2 minutes.Stir in remaining garlic salt and fluff rice with a fork.While rice microwaves, stem cilantro; keeping leaves whole.To serve, top rice with meatball mixture and garnish with cilantro. Bon appétit!
