To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

If using ground turkey, break up until turkey reaches minimum internal temperature, 6-8 minutes.

If using steak strips, pat dry, coarsely chop, then separate pieces. Stir occasionally until steak reaches minimum internal temperature, 4-6 minutes. Rest, 3 minutes.

1 Cook the Ground Beef
Place a large non-stick pan over medium-high heat.
Add ground beef to hot, dry pan. Break up meat until no pink remains and beef reaches a minimum internal temperature of 160 degrees, 4-6 minutes.Drain any excess liquid from pan, if desired. Pan will be hot! Use caution.Stir in taco seasoning (to taste) and enchilada sauce (to taste) until combined, 1-2 minutes.Remove from burner.While beef cooks, continue recipe. -
2 Prepare the Beans
Drain and rinse beans in a colander/strainer.

3 Mash the Beans
Place a medium pot over medium heat.
Add beans, pesto (to taste), 1/4 tsp. salt, and 1/4 cup water to hot pot. Stir to combine and bring to a simmer.Once simmering, stir occasionally until beans are softened, 3-5 minutes.Remove from burner. Mash until slightly chunky. Beans will be hot! Use caution.While beans cook, continue recipe. -
4 Heat Rice and Finish Dish
Carefully massage rice in bag to break up any clumps and remove from packaging.
In a microwave-safe bowl, combine rice, piri piri seasoning (to taste), and 1 tsp. olive oil.Microwave uncovered until heated through, 3-4 minutes.Carefully remove from microwave. Rest, 2 minutes.Fluff rice with a fork.Plate dish as pictured on front of card, topping rice with beans, ground beef, cheese, guacamole (to taste), salsa (to taste), and tortilla strips. Bon appétit!
