If using antibiotic free chicken, pat dry. Cook in a medium non-stick pan with 2 tsp. olive oil over medium heat until chicken reaches minimum internal temperature, 5-7 minutes per side.

1 Start the Potatoes
Prick potatoes all over with a fork.
Place potatoes in a microwave-safe bowl and cover with a damp paper towel. Microwave covered until slightly tender, 4-6 minutes.Carefully remove from microwave and transfer potatoes to a clean, flat work surface. Potatoes will be hot! Use caution. Wipe bowl clean and reserve.Using the flat side of an object, press down gently to smash each potato until 1/2" thick.Place potatoes in provided tray and gently toss with 2 tsp. olive oil and potato spice seasoning. Spread into an even layer.Bake uncovered in hot oven, 15 minutes.While potatoes bake, continue recipe. -
2 Sear and Add the Steaks
Pat steaks dry. Season both sides with 3/4 the garlic pepper (reserve remaining for goat cheese butter) and 1/4 tsp. salt.
Place a medium non-stick pan over medium-high heat and add 1 tsp. olive oil. Add steaks to hot pan. Cook undisturbed until browned, 2-3 minutes per side.Remove from burner. Steaks will finish cooking in a later step.After 15 minutes, carefully remove tray from oven and push potatoes to one side of tray. Tray will be hot! Use a utensil.Transfer steaks to now-empty side of tray. -
3 Assemble Salad, Make Goat Cheese Butter, and Finish Meal
Bake uncovered in hot oven until potatoes are browned and steaks reach a minimum internal temperature of 145 degrees, 5-7 minutes.
Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.While meal bakes, in a mixing bowl, combine spring mix, tomatoes, pine nuts, vinaigrette (to taste), and a pinch of salt. If you receive one whole tomato instead, not to worry; simply core tomato, cut into 1/2" dice, and proceed with recipe instructions.In reserved bowl, combine softened goat cheese, softened butter, and remaining garlic pepper. Set aside.Carefully remove tray from oven. Rest, 3 minutes.To serve, top steak with goat cheese butter and garnish potatoes with grated cheese. Bon appétit!
