To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

1 Heat the Rice
Massage rice in bag to break up any clumps. Place rice in a microwave-safe bowl. Stir in 2 Tbsp. water and mirepoix base until completely combined.
Microwave uncovered until heated through, 2-3 minutes.Remove from microwave and uncover. Stir in peas and 1/4 tsp. salt. Microwave uncovered until peas are heated through, 1-2 minutes.Remove from microwave and stir. Cover and set aside.While rice heats, continue recipe. -
2 Prepare the Ingredients
Trim and thinly slice green onions on an angle, keeping white and green portions separate.
Pat chicken dry and season all over with rotisserie chicken seasoning. In a mixing bowl, combine chicken and cornstarch until chicken is evenly coated. -
3 Cook the Chicken
Place a large non-stick pan over medium-high heat and add 5 tsp. olive oil.
Add chicken to hot pan. Stir occasionally until golden-brown and chicken reaches a minimum internal temperature of 165 degrees, 5-7 minutes. Transfer chicken to a plate and season with a pinch of salt. Keep pan over medium-high heat; no need to wipe clean. -
4 Make Glaze and Finish Dish
Add vinegar, white portions of green onions, and a pinch of salt to hot pan. Stir occasionally, 1 minute.
Stir in maple syrup, 2 Tbsp. water, and apricot preserves until combined. Bring to a simmer.Once simmering, stir constantly until beginning to thicken, 2-3 minutes.Stir in chicken and a pinch of pepper until coated. Remove from burner.Plate dish as pictured on front of card, topping rice with chicken and garnishing with green portions of green onions. Bon appétit!
