Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

Customize It Instructions

  • Meatlovers! If using protein, cook in a medium non-stick pan over medium heat with 1 tsp. olive oil.

  • If using antibiotic free chicken, pat dry. Cook until chicken reaches minimum internal temperature, 5-7 minutes per side.

  • Add protein to meal as desired.

    Start the Sweet Potatoes

    Peel and cut sweet potato into 1/2" dice.

    Place sweet potatoes in a microwave-safe bowl and cover with a damp paper towel.

    Microwave covered until tender, 4-6 minutes.

    Carefully remove from microwave.

    While sweet potatoes microwave, continue recipe.

    Prepare Ingredients and Make Creamy Salsa Verde

    Drain and rinse beans in a colander/strainer.

    Stem and mince cilantro.

    Stem poblano peppers, seed, and cut into 1/2" dice. Poblano peppers can vary in spice level; most are mild, but a few can be quite hot. Wash hands and cutting board after prepping.

    In a mixing bowl, combine salsa verde (to taste), creme fraiche, cilantro, hot sauce (to taste), and a pinch of salt. Set aside. Kids not a fan of extra heat? Feel free to skip/reduce the salsa verde and hot sauce.

    Cook the Filling

    Place a large non-stick pan over medium-high heat and add 2 tsp. olive oil. Add poblanos (to taste) to hot pan. Kids not a fan of extra heat? Feel free to skip/reduce the poblanos.

    Stir occasionally until slightly tender, 3-5 minutes.

    Add microwaved sweet potatoes, beans, fiesta seasoning, and a pinch of salt. Stir occasionally until combined and vegetables are slightly browned, about 3-4 minutes.

    Remove from burner.

    Assemble the Quesdillas

    Place tortillas on a clean, flat work surface.

    Divide cheeses evenly between tortillas, placing on one half. Evenly top cheeses with filling and chipotle crema. Fold tortillas over filling, pressing gently to adhere.

    Wipe pan clean and reserve.

    Toast Quesadillas and Finish Dish

    Return pan used to cook filling to medium heat and add 1 tsp. olive oil. Working in batches, add quesadillas to hot pan. Toast until golden-brown, 2-4 minutes per side.

    Replenish oil, if necessary.

    Remove from burner.

    Plate dish as pictured on front of card. Slice quesadillas, if desired. Serve creamy salsa verde on the side for dipping. Bon appétit!
