Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |
- Seafood 145° F |
- Chicken 165° F |
- Ground Beef 160° F |
- Ground Turkey 165° F |
- Ground Pork 160° F
Customize It Instructions

If using ground turkey, break up until turkey reaches minimum internal temperature, 6-8 minutes.

If using steak strips, pat dry, coarsely chop, then separate pieces. Stir occasionally until steak reaches minimum internal temperature, 4-6 minutes. Rest, 3 minutes.

1 Prepare the Ingredients
Hold romaine heart at root end and chop coarsely.
Cut potatoes into 1/2" dice.Core tomato and cut into 1/2" dice. -
2 Roast the Potatoes
Place potatoes, 1 Tbsp. olive oil, and 1/4 tsp. salt on one prepared baking sheet. Massage oil and seasoning into potatoes. Spread into a single layer. Have a little sous chef around? With supervision, have them help massage/season the potatoes.
Roast in hot oven until lightly browned, 25-30 minutes, tossing once halfway through.Carefully remove from oven.While potatoes roast, continue recipe. -
3 Make the Taco Bowls
Wrap tortillas in a damp paper towel. Microwave, 20 seconds.
If tortillas come folded, keep folded.Spray both sides of tortilla with cooking spray. Alternatively, coat evenly with 2 tsp. olive oil.Make two loosely-packed, softball-size foil balls, each about 5-6" in diameter. Place foil balls on second prepared baking sheet and lay a tortilla over each ball.Bake tortillas in hot oven until edges are crispy and browned, 8-10 minutes.Carefully remove from oven. -
4 Cook the Beef Mixture
Place a large non-stick pan over medium-high heat.
Add ground beef to hot, dry pan. Break up meat until no pink remains and beef reaches a minimum internal temperature of 160 degrees, 4-6 minutes.Drain any excess liquid, if desired. Pan will be hot! Use caution.Stir in roasted potatoes and taco seasoning until combined, 1-2 minutes.Remove from burner.While ground beef mixture cooks, continue recipe. -
5 Make Cheese Sauce and Finish Dish
In a microwave-safe bowl, combine pesto (to taste), cream cheese, shredded cheese, a pinch of salt, and 1/4 cup water. Cover with a damp paper towel. Kids not a fan of extra heat? Feel free to skip/reduce the pesto.
Microwave covered until cheeses are melted, 1-2 minutes.Carefully remove from microwave and stir to combine.Plate dish as pictured on front of card, filling taco bowl with beef mixture, romaine, tomatoes, sour cream, and cheese sauce. Bon appétit!
