Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

If using ground beef, break up until beef reaches minimum internal temperature, 4-6 minutes.

1 Prepare the Ingredients
Drain and rinse beans in a colander/strainer.
Hold lettuce at root end and halve lengthwise. Thinly slice and discard root.Core tomato and cut into 1/2" dice. -
2 Start the Filling
Place a large non-stick pan over medium-high heat and add 2 tsp. olive oil. Kids not a fan of extra heat? Feel free to skip/reduce the taco seasoning.
Add ground turkey and taco seasoning (use less if spice-averse) to hot pan. Break up meat until no pink remains and turkey reaches a minimum internal temperature of 165 degrees, 7-9 minutes. -
3 Finish the Filling
Kids not a fan of extra heat? Feel free to skip/reduce the enchilada sauce.
Add beans, enchilada sauce (to taste), 2 Tbsp. water, and 1/4 tsp. salt to hot pan. Stir occasionally until combined and beans are heated through, 2-3 minutes.Remove from burner and stir in cheese until combined. -
4 Assemble the Burrito Pockets
Wrap tortillas in a damp paper towel. If tortillas come folded, keep folded. Microwave until heated through, 30-60 seconds.
Carefully remove from microwave and transfer to a clean, flat work surface.Kids not a fan of extra heat? Feel free to skip/reduce the dressing. Evenly divide lettuce, tomatoes, half the dressing (to taste; reserve remaining for plating), tortilla strips, then filling (to taste) among tortillas, placing in center. Wipe pan clean and reserve.Fold bottom of tortilla up towards center, fold two sides towards center, then fold top down, overlapping other sides to form a square pocket. -
5 Toast Burrito Pockets and Finish Dish
Return pan used to cook filling to medium heat and add 2 tsp. olive oil.
Working in batches if necessary, place burrito pockets, seam-side down, in hot pan. Toast until golden-brown, 2-3 minutes per side.Remove from burner.Plate dish as pictured on front of card, halving burrito pocket, if desired. Serve remaining dressing on the side for dipping. Bon appétit!
