  • 1 Peeler
  • 1 Colander/Strainer

Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

Customize It Instructions

  • If using antibiotic free chicken, pat dry. Cook until chicken reaches minimum internal temperature, 5-7 minutes per side.

    Roast the Garlic

    Place garlic cloves and 1 tsp. olive oil on a piece of foil. Form a foil pouch around garlic.

    Place garlic pouch directly on oven rack, opening-side up.

    Roast in hot oven until garlic is tender, 15-20 minutes.

    Carefully remove from oven.

    While garlic roasts, continue recipe.

    Prepare the Ingredients

    Peel and cut potatoes into large evenly-sized chunks.

    Trim stems off Brussels sprouts and halve vertically (quarter if larger than a ping-pong ball).

    Pat steaks dry. Season both sides with steak seasoning and 1/4 tsp. salt. Steak coloration may vary upon arrival due to packaging processes; steak quality and flavor will not be impacted.

    Cook the Mashed Potatoes

    Bring a medium pot with 1 tsp. salt and potato chunks covered by water to a boil.

    Once boiling, cook until fork-tender, 14-18 minutes.

    Remove from burner. Reserve 1/2 cup potato cooking water. Drain potatoes in a colander/strainer and return to pot.

    Add garlic, 2 Tbsp. softened salted buttercreme fraiche, and garlic salt. Mash until combined. If too thick, add reserved potato cooking water, 1 Tbsp. at a time, until desired consistency is reached. Set aside and cover to keep warm.

    While potatoes cook, continue recipe.

    Roast the Brussels Sprouts

    Place Brussels sprouts on prepared baking sheet and toss with 2 tsp. olive oil, 1/4 tsp. salt, and 1/4 tsp. pepper. Spread into a single layer, cut-side down.

    Roast in hot oven, 10 minutes.

    Carefully remove from oven. Stir in cheese until combined and spread into a single layer. Sheet will be hot! Use a utensil. 

    Roast again in hot oven until Brussels sprouts are tender and browned, 6-8 minutes.

    Carefully remove from oven.

    While Brussels sprouts roast, continue recipe.

    Cook Steaks and Finish Dish

    Place a large non-stick pan over medium heat and add 2 tsp. olive oil.

    Add steaks to hot pan. Cook until steaks reach desired doneness, or 3-5 minutes per side for medium/medium-well.

    Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.

    Remove from burner and rest, 3 minutes.

    Plate dish as pictured on front of card, topping steak with softened truffle butter (to taste). Bon appétit!
