  • 1 Colander/Strainer

Before You Cook

Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

    Bake the Turkey

    Place turkey in prepared casserole dish. Break up into bite-sized pieces and spread into a single layer. Evenly top with 1/2 tsp. salt, 1/4 tsp. pepper, and 1 Tbsp. olive oil.

    Bake uncovered in hot oven, 10 minutes.

    Turkey will finish cooking in a later step.

    Carefully remove from oven. Drain any excess liquid and break up turkey into bite-sized pieces. Casserole dish will be hot! Use caution.

    Add the Beans and Sauce

    Drain and rinse beans in a colander/strainer.

    Add beans, taco seasoning, salsa (to taste), tomato sauce, and 1/3 cup water. Stir to combine and cover with foil. Casserole dish will be hot! Use a utensil.

    Kids not a fan of extra heat? Feel free to skip/reduce the salsa.

    Bake covered in hot oven until sauce is bubbling and turkey reaches a minimum internal temperature of 165 degrees, 13-18 minutes.

    Carefully remove from oven.

    While turkey mixture bakes, continue recipe.

    Heat Rice, Make Crema, and Finish Dish

    Carefully massage rice in bag to break up any clumps and remove from packaging.

    In a microwave-safe bowl, combine rice, butter, piri piri seasoning (use less if spice-averse), and 1/4 tsp. salt. Kids not a fan of extra heat? Feel free to skip/reduce the piri piri seasoning.

    Microwave uncovered until heated through, 3-4 minutes.

    Carefully remove from microwave. Rest, 2 minutes. Stir to combine and fluff rice with a fork.

    While rice microwaves, halve lime.

    In a mixing bowl, combine sour cream and 2 tsp. water. Kids want to help? With supervision, have them help prepare the crema.

    To serve, top rice with turkey mixture (to taste). Garnish with crema, cheese, and tortilla strips. Squeeze lime halves over to taste. Bon appétit!
