  • 4 oz. Tzatziki Cup
  • 2 oz. Creme Fraiche
  • ½ cup Panko Breadcrumbs

  • 2 tsp. Garlic Pepper
  • 1 tsp. Garlic Salt
  • 1 tsp. Chimichurri Seasoning

Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

    Prepare the Potatoes and Salmon

    Cut potatoes into 1" dice.

    Place potatoes on one prepared baking sheet. Add garlic pepper, garlic salt, and 4 tsp. olive oil. Massage oil and seasonings into potatoes.

    Pat salmon dry and season flesh side with a pinch of salt and pepper.

    Place salmon on second prepared baking sheet, skin-side down. Evenly top with 2 tsp. olive oil.

    Roast the Potatoes and Salmon

    Roast both sheets in hot oven until potatoes are slightly tender and salmon reaches a minimum internal temperature of 145 degrees, 13-15 minutes.

    Carefully remove sheets from oven. Push potatoes to one side of sheet. Sheet will be hot! Use caution. Let salmon cool, 5 minutes.

    Make the Salmon Cakes

    Once salmon is cool enough to handle, remove and discard skin.

    Transfer salmon to a mixing bowl and shred. Reserve sheet; no need to replace foil.

    Stir in creme fraiche, panko, chimichurri seasoning, 1/2 tsp. salt, and a pinch of pepper until thoroughly combined.

    Form salmon mixture into 8 evenly-sized cakes, about 3" in diameter.

    Add the Green Beans and Salmon Cakes

    Trim green beans, if necessary.

    Place green beans on empty half of potato sheet. Evenly top with 2 tsp. olive oil and 1/4 tsp. salt. Sheet will be hot! Use caution.

    Place salmon cakes on second reserved prepared sheet and spray with cooking spray.

    Finish Vegetables and Salmon Cakes and Finish Dish

    Roast both sheets in hot oven until vegetables are tender and salmon cakes have browned, 15-18 minutes.

    Carefully remove sheets from oven.

    Stir softened butter into green beans until melted and combined. Sheet will be hot! Use a utensil.

    Plate dish as pictured on front of card, topping salmon cakes with tzatziki. Bon appétit!
