To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

If using ground beef, cook in a medium non-stick pan over medium heat. Break up until beef reaches minimum internal temperature, 4-6 minutes.

1 Bake the Turkey and Peppers
Evenly divide ground turkey, mixed peppers, taco seasoning (use less if spice-averse), and half the garlic salt (reserve remaining for sauce) between both provided trays. Break up turkey into bite-sized pieces and spread into a single layer. Kids not a fan of extra heat? Feel free to skip/reduce the taco seasoning.
Evenly top both trays with 1 tsp. olive oil.Bake both trays uncovered in hot oven until turkey reaches a minimum internal temperature of 165 degrees, 17-20 minutes.While turkey and peppers bake, continue recipe. -
2 Add the Beans and Toppings
Drain and rinse beans in a colander/strainer.
After 17-20 minutes, carefully remove both trays from oven and drain any excess liquid. Trays will be hot! Use caution.Evenly divide enchilada sauce (to taste), tomato sauce, beans, remaining garlic salt, and 1/4 tsp. pepper between both trays. Kids not a fan of extra heat? Feel free to skip/reduce the enchilada sauce. Stir to combine and spread into an even layer.Evenly top both trays with cheese, then tortilla strips.Bake both trays again uncovered in hot oven until cheese is melted, 10-15 minutes. Carefully remove from oven.While meal bakes, continue recipe. -
3 Heat Rice and Finish Meal
Carefully massage rice in bag to break up any clumps and remove from packaging. Place rice in a microwave-safe bowl.
Microwave uncovered until heated through, 3-4 minutes.Carefully remove from microwave. Rest, 2 minutes.Stir in 1/4 tsp. salt and fluff rice with a fork.To serve, top turkey mixture with sour cream. Bon appétit!
