If using ground beef, break up until beef reaches minimum internal temperature, 4-6 minutes.

1 Prepare the Ingredients
Drain and rinse beans in a colander/strainer. Kids want to help? With supervision, have them help prepare the beans.
Stem poblano, seed, and cut into 1/4" dice. Poblano peppers can vary in spice level; most are mild, but a few can be quite hot. Wash hands and cutting board after prepping. -
2 Cook the Filling
Place a large non-stick pan over medium-high heat and add 1 tsp. olive oil. Add poblanos (to taste) and diced peppers to hot pan. Stir occasionally until peppers are tender, 4-6 minutes.
Transfer 1/4 the pepper mixture to a microwave-safe bowl; keeping remaining in pan. Set bowl aside.Add ground turkey to pan and break up meat until no pink remains and turkey reaches a minimum internal temperature of 165 degrees, 7-9 minutes.Add beans, corn, taco seasoning, and half the cream cheese (reserve remaining for queso). Stir until combined and cream cheese is melted, 1-2 minutes.Remove from burner. Kids not a fan of extra heat? Feel free to skip/reduce the poblanos. -
3 Assemble and Broil the Taquitos
Place tortillas on a clean work surface. Evenly divide filling between tortillas, placing in center. Top with half the shredded cheese (reserve remaining for queso).
Roll tightly and place seam-side down on prepared baking sheet. Spray taquitos with cooking spray.Broil under hot broiler until taquitos are crispy and golden-brown, 2-4 minutes, flipping once halfway through.Don't text and broil! Keep an eye on oven as taquitos may burn easily under broiler.Carefully remove from oven. -
4 Make Queso and Finish Dish
Add a pinch of salt, 1/4 cup water, remaining shredded cheese, remaining cream cheese, and cream base to bowl with pepper mixture. Stir to combine. Cover with a damp paper towel.
Microwave covered until cheese is melted, 1-2 minutes.Carefully remove from microwave. Vigorously stir to combine. Cover with a damp paper towel.Microwave again covered until hot and bubbling, 1-2 minutes.Carefully remove from microwave.Plate dish as pictured on front of card, serving queso on the side for dipping. Halve taquitos, if desired. Bon appétit!
