It's been a rough, long work week. (We don't know about that at the Home Chef test kitchen, but we've heard rumors that work weeks can be rough!) Projects pile up, co-workers get on the nerves, coffee's stale, and the copy machine broke down one copy in. We're not suggesting you should eat your stress, but we are saying these hearty meatloaves doused in BBQ, with cheesy mashed potatoes on the side, are the perfect antidote to the weekly grind. (And there are fresh green beans on the side, just in case you have a hint of guilt about not eating healthy.)

Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

- Chicken 165° F |
- Ground Beef 160° F |
- Ground Turkey 165° F |
- Ground Pork 160° F

If using ground pork, roast until loaves reach minimum internal temperature, 28-32 minutes.

If using ground turkey, roast until loaves reach minimum internal temperature, 20-25 minutes.

If using Impossible burger, roast until loaves reach a minimum internal temperature of 160 degrees, 25-30 minutes.

1 Start the Meatloaves
In a mixing bowl, combine ground beef, BBQ spice rub (use less if spice-averse), 2 Tbsp. water, panko, and a pinch of salt.
Form mixture into two equally-sized, oval-shaped loaves. Place loaves on prepared baking sheet.Roast in hot oven until loaves reach a minimum internal temperature of 160 degrees, 20-25 minutes.While meatloaves roast, continue recipe. -
2 Make the Mashed Potatoes
Cut potatoes into large, evenly-sized chunks. Bring a medium pot with potatoes covered by water to a boil.
Once boiling, cook until fork-tender, 14-18 minutes.Remove from burner. Reserve 1/2 cup potato cooking water. Drain potatoes in a colander and return to pot. Add 1/2 tsp. salt, cream cheese, and half the potato cooking water. Mash until combined and smooth. If too thick, add additional potato cooking water, 1 Tbsp. at a time, until desired consistency is reached. Cover and set aside.While potatoes cook, continue recipe. -
3 Prepare the Ingredients
Trim ends off green beans, if necessary. Cut into 2" pieces.
Trim and thinly slice green onions. -
4 Finish the Meatloaves
Carefully remove meatloaves from oven. Top meatloaves evenly with BBQ sauce. Sheet will be hot! Use a utensil.
Roast again in hot oven until sauce glazes loaves, 4-5 minutes.Carefully remove from oven. Rest, 3 minutes.While meatloaves roast, continue recipe. -
5 Cook Green Beans and Finish Dish
Place a medium non-stick pan over medium-high heat and add 1 tsp. olive oil. Add green beans, 1/4 cup water, and a pinch of salt and pepper to hot pan. Cover and cook until water is evaporated and green beans are tender, 4-6 minutes.
If green beans need more time, add 2 Tbsp. water and stir occasionally, 1-3 minutes.Remove from burner.Plate dish as pictured on front of card, garnishing mashed potatoes with cheese and green onions. Bon appétit!
