Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

Customize It Instructions

  • If using antibiotic free chicken, follow same instructions.

  • If using salmon, pat dry. Cook in a medium non-stick pan with 2 tsp. olive oil over medium heat until salmon reaches minimum internal temperature, 4-6 minutes per side.

  • If using sirloin steaks, pat dry. Cook in a medium non-stick pan with 2 tsp. olive oil over medium heat until steak reaches desired doneness, or 4-6 minutes per side for medium/medium-well. Rest, 3 minutes. Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.

    Prepare Ingredients and Make Corn Mixture

    Trim and thinly slice green onions, keeping white and green portions separate.

    Stem poblano peppers, halve lengthwise, and seed. Poblano peppers can vary in spice level; most are mild, but a few can be quite hot. Wash hands and cutting board after prepping.

    In a mixing bowl, combine softened cream cheese, corn, half the fiesta seasoning (reserve remaining for chicken), white portions of green onions, and a pinch of salt. Set aside.

    Pat chicken dry and season both sides with remaining fiesta seasoning and a pinch of salt and pepper.

    Start the Poblanos and Chicken

    Place poblanos, cut-side down, on one half of prepared baking sheet and spray with cooking spray.

    Place chicken on empty side of sheet and evenly top with 1 tsp. olive oil.

    Roast in hot oven, 10 minutes.

    Carefully remove from oven.

    Finish the Poblanos and Chicken

    Flip poblanos and season with a pinch of salt. Fill poblano halves evenly with corn mixture, then shredded cheese. Sheet will be hot! Use a utensil.

    Roast again in hot oven until poblanos are tender and chicken reaches a minimum internal temperature of 165 degrees, 5-10 minutes.

    Carefully remove from oven.

    While poblanos and chicken roast, continue recipe.

    Heat Rice and Finish Dish

    Carefully massage rice in bag to break up any clumps and remove from packaging. Place rice in a microwave-safe bowl.

    Microwave uncovered until heated through, 2-3 minutes.

    Carefully remove from microwave and rest, 2 minutes. Stir in half the piri piri seasoning (to taste; remaining is yours to use as you please!) until combined. Fluff rice with a fork.

    Plate dish as pictured on front of card, topping chicken with chipotle crema and green portions of green onions. Bon appétit!
